Origins and cultural heritage — curry SAMIA
Curry SAMIA brings together turmeric, coriander, cumin, fenugreek, ginger, pepper and chilli in the tradition of blends originating in southern India. Adopted in Réunion, South Africa and Mauritius by the Indian communities who settled there in the 19th century. It is found notably in Réunion massalé, rougail saucisses and Mauritian curries.
Culinary uses — curry SAMIA
- Réunion massalé curry (kid goat or chicken): 2 tablespoons in the tomato-onion sauce.
- Rougail saucisses: 1 tablespoon with fresh ginger and thyme.
- Mauritian fish curry: 1 tablespoon with coconut milk.
- Lentil curry: 1 teaspoon for 200g of red lentils.
- Indian scrambled eggs (anda bhurji): 1/2 teaspoon with tomato and coriander.
