NUMBER ONE cloves are the dried flower buds of the clove tree (Syzygium aromaticum), a whole dark brown spice with a powerful, woody, slightly peppery aroma. They flavour stocks, marinades and slow-cooked dishes. 100 g pouch.
What is a clove?
The clove tree is native to the Moluccas, in Indonesia. Today, most of the cloves sold worldwide come from Indonesia, Madagascar, Tanzania (Zanzibar) and the Comoros. The flower buds are hand-picked before they open, then sun-dried until they turn brown and brittle. Their taste is warm, woody and slightly peppery, with a sharp edge that numbs the tongue a little.
How to use it?
Stick two or three cloves into an onion to flavour a stock, a sauce or a slow-cooked meat dish, without having to fish them out afterwards. You can also add them whole to a stew, a spiced rice or a marinade: a few cloves are enough for a dish serving 4 to 6, as the spice is powerful. Always remove the whole cloves before serving. Ground, cloves go into spice blends and certain pastries.
What to pair it with?
In Caribbean cooking, cloves flavour cod blaff, Haitian griot or Creole brandade. They also pair well with SAMIA cinnamon sticks in stocks and marinades. The full range is in the African and Caribbean spices and condiments collection. In the same range: SAMIA ground cloves.
