What are ground cloves?
Cloves are the dried flower bud of the clove tree (Syzygium aromaticum), a dark brown spice with a warm, woody, penetrating aroma. Here, they are sold already ground into a fine powder, ready to use, whereas whole cloves need to be removed from the dish after cooking or stuck into an onion to flavour a stock.
How to use it?
According to the pouch's label, SAMIA ground cloves go into gingerbread, biscuits mixed with cinnamon, pot-au-feu, marinades, sauerkraut, and they are essential to most curries. Add a pinch at the start of cooking for a slow-cooked dish, or directly into the batter for a pastry. Their aroma is powerful: dose gradually, as a pinch is often enough for a whole pot.
