What are blanched almonds?
Blanching an almond means removing its brown skin, most often with a brief dip in hot water. The result is an almond with pale, even flesh, a crunchy texture and a mild taste, more subtle than that of the almond with its skin on. PROFRUIT is a brand of the distributor Haudecœur.
How to use them?
They can be eaten as they are as a snack, or used in sweet preparations: homemade almond flour, almond paste, financiers, macarons, nougat. In savoury cooking, they garnish Moroccan tagines and Middle Eastern slow-cooked dishes, whole or crushed. For a roasted, sweet version, brown them dry for a few minutes then coat them with a little sugar and cinnamon.
