Ingrédients

  • 1 kg de courge giraumon (à défaut : potimarron)
  • 500 g de bœuf à mijoter (jarret ou paleron)
  • 2 carottes
  • 2 navets
  • 2 pommes de terre
  • 200 g de chou blanc
  • 200 g de macaronis ou pâtes courtes
  • 3 oignons
  • 5 gousses d'ail
  • 5 cives
  • 1 bouquet garni
  • 1 piment scotch bonnet
  • 2 cubes bouillon
  • Jus de 2 citrons verts
  • Sel, poivre, huile

Préparation

    Préparer la viande : Frottez le bœuf au citron vert et sel. Coupez en cubes.

    Cuire la viande : Dans une grande marmite, faites revenir les oignons, ail, cives dans l'huile. Ajoutez le bœuf. Saisissez 5 min. Couvrez de 2 L d'eau. Ajoutez bouquet garni, cubes. Laissez cuire 1h.

    Cuire la courge : Pelez la courge giraumon. Coupez en cubes. Cuisez à part dans 1 L d'eau salée 25 min jusqu'à tendreté.

    Mixer la courge : Mixez la courge avec son eau de cuisson pour obtenir une purée lisse.

    Combiner : Ajoutez la purée de courge dans la marmite avec la viande.

    Cuire les légumes : Pelez et coupez carottes, navets, pommes de terre, chou. Ajoutez à la soupe. Laissez cuire 15 min.
