Method

Preparing the guava filling

  1. Simmer the diced guava with the sugar, cinnamon and allspice for about 8 to 10 minutes, until the fruit is tender. If fresh guavas are not available, simply warm the guava jam with the spices instead.
  2. Let cool slightly.

Preparing the dough

  1. Mix the flour, baking powder and salt.
  2. Rub in the butter with your fingertips until the texture resembles sand.
  3. Add the milk and egg, mix until you get a soft dough, then knead briefly on a floured surface.

Assembling and steaming

  1. Roll out the dough into a rectangle about 30 x 45 cm.
  2. Spread the guava filling over the whole surface and roll the dough up tightly on itself.
  3. Wrap the roll in a clean cloth, tying both ends firmly.
  4. Plunge the roll into a large pot of boiling water, cover and cook for about 1 hour 15 minutes, adding water if needed to keep it submerged.

Sauce and serving

  1. Whisk the softened butter until creamy, then gradually add the icing sugar.
  2. Add the unsweetened condensed milk, salt and rum, and whisk until you get a smooth sauce.
  3. Cut the duff into thick slices and serve hot, topped with the rum sauce.

Tips

The rum sauce is never cooked: it keeps all the added alcohol, so save it for adults.

Origins and cultural history of guava duff

Guava duff belongs to the “duff” family, rolled steamed puddings of British heritage, like the plum duff traditionally served at Christmas. The Bahamas, a former British colony, made it into a local specialty by replacing the original filling with guava, a fruit widely grown across the archipelago.

Today it is a convivial Bahamian dessert, made as a family and served on special occasions, always accompanied by its butter and rum sauce poured over just before serving.

What are the essential ingredients of guava duff

What to know about guava duff

Guava duff is a dessert from the Bahamas, a leavened dough rolled around a stuffing of guava and steamed. It belongs to the family of “duffs”, rolled puddings of British heritage, like the plum duff served at Christmas. It is prepared within the family for special occasions, with a butter and rum sauce poured over just before serving. This sauce is not cooked: it keeps all its alcohol and is not suitable for children or for people who avoid alcohol.

Frequently asked questions about guava duff

Does the guava duff sauce contain alcohol once served?

Yes: unlike the dough, the rum sauce is not cooked, it is simply whisked with the butter and icing sugar. It therefore keeps all the alcohol from the rum added and is not suitable for children or for people who avoid alcohol.

Can fresh guavas be replaced with jam or canned pulp?

Yes, this is even the most common approach outside the Bahamas: guava jam or canned pulp easily replace fresh fruit in the filling, while slightly reducing the added sugar since they are already sweetened.
