Method

  1. Clean and scale the tilapias, then slash the flesh on both sides to speed up cooking and let the marinade penetrate.

  3. Generously coat the tilapias with this paste, including inside the slashes and inside the fish.
  4. Let marinate in the refrigerator for at least 30 minutes, ideally 1 to 2 hours.
  5. Preheat the barbecue or oven to medium-high heat.
  6. Grill the tilapias for 10 to 12 minutes on each side, basting regularly with the marinade, until the skin is golden and the flesh flakes easily with a fork.

Origins and cultural history of tilapia

Tilapia belongs to the genus Oreochromis, a freshwater fish native to Africa: it is found naturally in the Nile basin, Lake Victoria and many other lakes and rivers across the continent. Since the 1950s, its farming has developed with the support of the FAO, the United Nations organization for food and agriculture, making it today one of the most widespread farmed fish in the world.

Grilled fish holds an important place in several African cuisines, particularly in Cameroon and Côte d'Ivoire, where it accompanies family meals and large gatherings. Marinated then cooked on a grill or barbecue, it is traditionally served with rice, fried plantain or cassava.
