ROYAL BOURBON green chilli paste is a traditional spicy condiment from Réunion, made with green chillies, ginger and combava. It is used in small amounts, in cooking or at the table. 100 g jar, made in Réunion.
What is green chilli paste?
It belongs to the same family of spicy Réunion condiments as the red cabri chilli paste: chillies crushed with salt, vinegar and aromatics typical of the Indian Ocean. This version combines green chillies (65.1%) with ginger, salt, vinegar, combava (a citrus fruit whose zest flavours Creole cooking) and a preservative (sorbic acid). Its green colour and vegetal freshness set it apart from the red version, which is riper and sweeter.
How to use it?
Place a small dab on the edge of the plate, next to a rougail or a cari, so everyone can adjust their heat. It can also be stirred in at the end of cooking into a sauce or a marinade, or spread very thinly on rice or lentils. Green chilli remains very fiery: start with a tiny amount and taste before adding more.
What to pair it with?
For a complete Réunion meal, it goes with ROYAL BOURBON smoked Cape peas or ROYAL BOURBON smoked red beans, served with LOTUS fragrant Thai rice. For a riper heat, there is also ROYAL BOURBON red cabri chilli paste. The Réunion grocery range brings together the rest of the range.
