Whole kpele NUMBER ONE comes as dried leaves, sold unground. In West Africa, it is used to bind and thicken simmered sauces, in the same way as gombo or lalo. 100 g pouch.
What is kpele?
Kpele is a traditional West African ingredient, sold by NUMBER ONE as whole dried leaves or as a powder. It belongs to the family of sauce thickeners, such as gombo, lalo (baobab leaves) or fakoye (jute leaves), without being any of these products: NKOSI sells each one separately.
How to use it?
- Soak or boil the dried leaves to soften them.
- Pound or blend them to the desired consistency.
- Stir into your sauce at the end of cooking, until you get the desired thickened texture.
Kpele goes with foutou, rice and simmered meat or fish dishes.
What to pair it with?
Find other West African sauce thickeners in the Gombo, Ogbono and Sauce Thickeners collection, or the already-ground version with NUMBER ONE kpele powder.
