The foufou kit brings together 4 products to prepare foufou, this smooth cassava paste that accompanies sauces from West and Central Africa, along with a palm-nut sauce to go with it. All that's left to add is the meat, fish, fresh onion and chilli of your choice.
What's in the kit?
- RACINES foufou, 1 kg bag: the cassava flour for the paste.
- TROFAI palm-nut sauce, 400 g box: the palm-nut pulp concentrate for the sauce.
- NUMBER ONE red palm oil, 500 ml bottle.
- JUMBO chicken stock, 1 kg jar, powdered.
How do you prepare foufou and its sauce?
For the foufou, boil water (one glass of water per glass of flour, following the guidance on the RACINES bag), pour the cassava flour in gradually while stirring constantly with a spatula, until you get a smooth, lump-free paste, then shape it into balls. For the sauce, pour the TROFAI palm-nut sauce concentrate into a pot, dilute it with water little by little, and let it simmer for 15 to 20 minutes over medium heat until the oil rises to the surface. Add a spoonful of red palm oil for colour, a pinch of JUMBO chicken stock for seasoning (it is very salty, taste before adding more salt), then the meat or fish, onion and chilli of your choice. Serve the foufou in balls, to dip into the sauce.
Where does foufou come from?
Foufou is very widespread across sub-Saharan Africa, especially in West Africa: Ghana, Côte d'Ivoire, Congo, Benin, Togo and Cameroon prepare it regularly. Traditionally, the root or tuber is boiled and then pounded at length with a mortar and pestle, a physical task that is often accompanied by convivial gatherings. The step-by-step recipe is on the blog: cassava foufou.
