It is found in several West African cuisines, particularly in Côte d'Ivoire, where it serves as an umami condiment to enhance sauces and stocks without using an industrial stock cube. Its flavour is marine, salty and smoky, more concentrated than that of whole dried shrimp.
How to use it?
One to two teaspoons are enough for a pot of gombo sauce, groundnut sauce or jollof rice: add the powder while cooking and stir, it dissolves directly into the liquid. It can also be mixed into a fish marinade or sprinkled at the end of cooking over sautéed vegetables for a marine note.
What to pair it with?
