Mbongo tchobi (or mbongo'o tchobi) is the iconic black sauce of the Bassa people, in the Littoral region of Cameroon. This NUMBER ONE bag brings together, as whole seeds, the forest seeds that traditionally make up this blend, to be roasted and pounded yourself. 100 g bag.
What is mbongo tchobi?
Mbongo tchobi refers both to the dish, a black sauce with fish or meat, and to the blend of seeds that gives it its colour and smoky flavour. Bassa tradition combines several Cameroonian forest seeds: njansang (or akpi), pébé (Gabon nutmeg), the "4 côtés" and the mbongo spice itself, sometimes supplemented with grains of paradise depending on the family. Roasted then pounded, these seeds darken and release their characteristic woody, smoky aroma. It is also spelled mbongo chobi or bongo tchobi.
How to use it?
Dry-toast the seeds in a pan for a few minutes until they darken slightly, then grind them into a powder with a mortar or a blender. Fry this powder with onion, garlic and aromatics, add fish (traditionally smoked) or meat, then let it simmer until you get a thick, dark sauce. Serve with plantain, cassava or white rice. The full method is on the Cameroonian mbongo tchobi recipe.
What to pair it with?
For a blend already ready to cook, the NUMBER ONE powder version skips the roasting step. NUMBER ONE whole akpi strengthens the binding texture of the sauce, and our djansang (akpi) guide details its use. The whole Cameroonian cooking range is gathered in a single collection.
