NUMBER ONE bay leaf powder is made from dried, ground bay leaves. More convenient than the whole leaf, it releases its woody aroma as soon as it touches a hot liquid, with no need to remove it at the end of cooking. 100 g bag.
What is bay leaf?
Bay laurel (Laurus nobilis) is a Mediterranean shrub whose leaves are dried for cooking, not to be confused with oleander, a toxic ornamental plant that has nothing to do with this spice. Ground, the leaf loses its rigidity and instantly releases its woody, slightly camphorous scent, more concentrated than as a whole leaf.
How to use it?
A pinch of powder replaces one whole leaf: allow half a teaspoon for 4 to 6 people. It flavours simmered sauces such as Senegalese mafé or chicken yassa, stocks, meat and fish marinades, and legume dishes. Unlike the whole leaf, which stays hard and must be removed before serving because it can lodge in the throat or injure the intestine if swallowed, the powder mixes directly into the dish without this risk.
What to pair it with?
With the other ground spices in the African spices and sauces range, or to prepare a Senegalese beef mafé simmered with peanut paste. SAMIA whole bay leaves remain useful for long cooking times where you prefer to remove the leaf at the end of preparation.
