The bissap infusion from RACINES’ "Les infusions d’Afrique" range is 100% hibiscus flower (Hibiscus sabdariffa) in 25 bags of 1.6 g. One bag per cup, and bissap is ready in a few minutes, to drink hot or cold.
What is bissap?
Bissap, or karkadé, is the dried flower of red hibiscus. In Senegal, it is the drink of hospitality, prepared in large quantities with loose flowers, sugar and often mint or ginger; in the Caribbean, it is used to make Christmas sorrel. These bags give the single-cup version: a ruby-red, tangy infusion, its taste often compared to cranberry. RACINES is a Montpellier company specialising in African and Caribbean groceries since 1987.
How to prepare it?
- Put a bag in a cup.
- Pour in gently simmering water.
- Leave to infuse for 3 to 5 minutes, then remove the bag.
For an iced version, infuse several bags in a jug of hot water, sweeten to taste, let it cool, then place in the refrigerator. For a large pitcher of traditional bissap juice, loose whole flowers are a better choice.
What to pair it with?
For Senegalese-style bissap juice, TANTIE whole red bissap. In the same range, the RACINES ginger infusion. The recipe for Jamaican sorrel is on the blog, and the bissap guide explains everything about this flower. The whole range: bissap and hibiscus flowers.
