Ingredients

Forservings
  • 600 g of breadfruit, peeled and cut into pieces (about half a ripe fruit)
  • 100 g of smoked bacon, cut into lardons (or 300 g of salt cod, desalted, as an alternative)
  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 2 sprigs of spring onion, sliced
  • A few sprigs of dried thyme
  • 1 bay leaf, or bois d'Inde leaf
  • 1 small whole Caribbean chilli
  • 2 tablespoons of oil
  • 80 cl of water
  • Salt

Method

Preparation

  1. Peel the breadfruit and cut it into large pieces.
  2. Slice the onion, spring onion and garlic.
  3. If using salt cod instead of the bacon, desalt it beforehand in cold water for several hours, changing the water several times.

Cooking the breadfruit

  1. Plunge the breadfruit pieces into a pan of unsalted boiling water, cook for 5 minutes, then drain.

Aromatic base

  1. In a pot, sauté the smoked bacon (or the drained cod) with the oil for a few minutes.
  2. Add the onion, garlic and spring onion, and sauté for 5 minutes.

Simmering and finishing

  1. Add the breadfruit, water, thyme, bay leaf, whole chilli and salt. Cover and simmer for about 35 minutes, until the breadfruit is very tender.
  2. Remove the chilli, thyme and bay leaf.
  3. Mash everything with a wooden spoon until you get a light purée, not completely smooth. Serve hot.

Tips

Migan can also be made without meat, with giraumon (a Caribbean squash) added to the breadfruit: this is the version found for example in Le Lamentin, Martinique.

Origins and cultural history of migan de fruit à pain

Migan de fruit à pain is a dish from the French Caribbean, particularly associated with Martinique, where it is found for example in the town of Le Lamentin, and with Guadeloupe.

Breadfruit itself comes from Oceania: the tree was domesticated more than 3,000 years ago in the New Guinea region before spreading across the Pacific. It was introduced to the Caribbean at the end of the eighteenth century: in 1789, Captain William Bligh was given the task of transporting plants from Tahiti to feed enslaved people at low cost, a voyage remembered for the mutiny on the Bounty. The plants finally arrived in the English Caribbean in 1793, and over the course of the nineteenth century the breadfruit tree became a common crop on the islands, integrated into Creole cuisine.
