What is yellow sauce?
Taro in yellow sauce, or achu, is a dish from Northwest Cameroon: the taro is pounded into a paste, served with a thick sauce made from palm oil, mushrooms and spices, sometimes accompanied by beef skin or tripe. This condiment provides the spice blend that gives the sauce its golden colour and its bold taste. Blends of this type traditionally combine about a dozen spices and barks (essèssè, rondelle, baies de sélim, poivre long africain, racine kankan, baies ganshu, écorce rouge, liane blanche, racine tubéreuse, the spice known as “oreille de souris”, mbongo, noix de pèbè): check the exact composition on the label of the sachet you receive.
How to use it?
Mix the condiment into palm oil heated with the mushrooms and the meat or tripe, then let it simmer until you get the yellow sauce that goes with pounded taro. Dose it to taste, and it can also season a meat broth.
What to pair it with?
Essèssè is part of this blend's traditional composition: find it whole in the quatre côtés spice or in pieces. Taro, the base of the dish, is found in the African tubers aisle, and Cameroonian cuisine has its own aisle.
