What is nigella?
Cultivated nigella, Nigella sativa, produces small angular black seeds 2 to 3 mm in size. Depending on country and language, it is called habba sawda or habbat al baraka in Arabic (Maghreb, Middle East), kalonji in Hindi and Urdu (India, Pakistan), or çörek otu in Turkish. Its taste is peppery, slightly bitter, sometimes lemony.
How to use it?
Sprinkle the whole seeds over bread, flatbreads, cheese or a salad. Stir them into marinades, sautéed vegetables, stewed dishes or a curry. Lightly dry-roast them in a hot pan to intensify their aroma before use, or steep a pinch in hot water for a herbal tea.
