BAMA mayonnaise is a thick egg-based condiment, made in the United States and widely sold in West Africa, especially in Nigeria, where it accompanies salads, sandwiches and fried dishes. NKOSI sells it in a 473 g jar.
What is BAMA mayonnaise?
BAMA is a brand of the C.F. Sauer Company, an American company from Richmond, Virginia, which has made condiments since 1887 and took over the Bama range in 1996. Its recipe (soybean oil, eggs, water, vinegar, sugar, salt, onion and other natural seasonings, paprika extract, lemon oil) gives a thick mayonnaise, with a bolder taste than classic French mayonnaises. The jar sold by NKOSI, barcode 052500082246, corresponds to the 473 g (16 ounce) size: it is not the large 946 ml jar of the same recipe.
How to use it?
In Nigeria and throughout the sub-region, BAMA mayonnaise binds jollof salad (rice, vegetables, hard-boiled eggs), coats fried chicken or fish and plantain fries, and is spread on a sandwich. Mixed with a little mustard and chilli, it makes a cold sauce to go with grilled meats. Once the jar is opened, keep it in the fridge and close it well after each use.
What to pair it with?
It goes well with NUMBER ONE plantain chips for dipping, or with a jollof rice kit for the salad that traditionally goes with it. Ghanaian and Nigerian cooking has its own range.
