It combines turmeric, coriander, cumin, fenugreek, mustard and chilli. It is the signature spice of chicken colombo and kid-goat colombo. It is found notably in Martinican chicken colombo, Guadeloupean kid-goat colombo and fish colombo.

- West Indian chicken colombo: 2 tablespoons in an oil-rum-garlic marinade.
- Kid-goat colombo: 2 tablespoons, simmer with sweet potato and chayote.
