  • 210 g fine white maize flour (sembe)
  • 710 ml water (3 cups)
  • ¾ teaspoon salt
  • 1½ tablespoons butter, optional

  1. Bring the water to a boil in a medium saucepan.
  2. Add the salt and reduce to medium-low heat; stir in the butter, if using, until melted.
  3. Pour in the maize flour in a light rain while whisking constantly to avoid lumps; switch to a thick wooden spoon once the mixture thickens.

Origins and cultural history of Kenyan ugali

In Kenya, white maize flour is known by the Swahili name sembe, or unga wa sembe (unga meaning flour and mahindi meaning maize); its preparation, ugali, forms the base of almost every daily meal in the country, eaten with the hand.

Ugali is traditionally paired with two other pillars of the Kenyan table: sukuma wiki, sautéed green cabbage with tomato and onion whose name literally means “push the week”, and nyama choma, grilled goat or mutton whose name means “roasted meat” in Swahili. Together, these three dishes form the most common meal in everyday Kenyan cooking.
