Method

Preparing the filling

  1. Peel and dice the potatoes, then cook them in salted boiling water for 15 to 20 minutes, until tender. Drain and mash with a fork.
  2. Crumble the drained tuna and mix it with the mashed potatoes, chopped onion, parsley, capers and harissa. Season lightly with salt, since the tuna is already salted, and add pepper.

Assembly

  1. Lay a sheet of brick pastry flat. Place 2 to 3 tablespoons of filling in the center, forming a hollow.
  2. Crack a whole egg into the hollow in the filling. Fold the sheet into a rectangle or triangle, sealing the edges well with a little water, without breaking the yolk.

Frying

  1. Heat about 2 cm of oil in a frying pan over high heat. Slide in the brick gently.
  2. Brown it for 2 to 3 minutes on each side for a runny yolk, a little longer over medium heat for a more cooked yolk.
  3. Drain on paper towel and serve immediately, with a lemon wedge.

Filled with a whole egg, tuna and potatoes then fried, egg brick is among the most emblematic specialties of Tunisian cuisine, served as a hot starter both at home and in street food stalls.

Frequently asked questions about Tunisian egg brick

How do you get a runny egg yolk in the brick?

Heat the oil over high heat and slide in the brick for just 2 to 3 minutes on each side, enough time to brown the pastry: a short, brisk cooking time keeps the yolk runny. For a more cooked yolk, extend the cooking time slightly over medium heat.

Can the egg brick filling be prepared in advance?

Yes. The mashed potato, tuna and herb mixture can be prepared several hours ahead and kept in the refrigerator. Assembling and cooking the egg, however, should be done just before serving, to keep the pastry sheet crisp.
