Method

Preparing the dough

  1. Mix the flour and salt in a large bowl.
  2. Add the oil, then pour in the warm water little by little, kneading until you get a smooth, supple dough.
  3. Cover the dough with a cloth and let it rest for at least 30 minutes at room temperature.

Preparing the filling

  1. Finely chop the onion and dice the tomato.
  2. Mix the raw minced meat with the onion, tomato and chilli; season with salt and pepper to taste.

Assembling and cooking

  1. Divide the dough into 4 portions. On an oiled surface, stretch each portion into a very thin disc, by hand or with a rolling pin.
  2. Spread a portion of the meat filling over half of the disc, crack an egg on top and spread it lightly with a fork over the filling.
  3. Fold the dough over into quarters to fully enclose the filling, forming a square.
  4. Heat a little oil in a frying pan and cook each pizza for about 4 minutes on each side, until the dough is golden and crisp and the meat is cooked through.
  5. Serve hot, cut into pieces, with a spicy sauce if desired.

Origins and cultural history of Zanzibar pizza

Zanzibar pizza is not an Italian pizza but a stuffed, fried pancake, close to the chapati mayai (“egg chapati”) found in Mombasa, Kenya. According to local historian Farid Hamid, it may be a variant of it: a vendor from Pemba, set up at Forodhani market, not knowing how to explain the dish to foreign visitors, is said to have simply called it “pizza”, a name that has stuck ever since.

It is mostly associated with the stalls of Forodhani Gardens, Stone Town’s seaside night market, where vendors set up their hotplates at sunset and offer the pancake filled with meat, egg and vegetables, to take away or eat on the spot.

What are the essential ingredients of Zanzibar pizza

The dough of Zanzibar pizza is as thin as a chapati, filled with a stuffing that can be adapted to taste.

  • flour and oil for the dough

  • chilli
