Method

  1. Peel the green papaya, cut it in half, remove the seeds, then grate the flesh using the coarse side of a grater.
  2. Peel and grate the carrot the same way.
  3. Immediately drizzle the grated papaya and carrot with the lime juice, to keep them from browning.
  4. In a bowl, crush the garlic with the finely sliced chili pepper, add the oil, the salt and the pepper, and mix.
  5. Pour this vinaigrette over the papaya and carrot, and mix well.
  6. Add the diced bell pepper if using, and adjust the seasoning.
  7. Chill in the refrigerator for at least 15 minutes before serving well chilled.

Tips

Grated papaya and carrot keep for two to three days in the fridge in an airtight container, but mix in the vinaigrette just before serving: the salad softens once dressed.

In brief

  • Origin: French Antilles, Martinique and Guadeloupe.
  • Key ingredients: green papaya, carrot, lime, garlic, chili pepper.
  • Starter served fresh, as a side to a Creole dish or as an appetizer.

Origins and cultural history of the green papaya salad

The papaya tree grows widely in the Antilles, and green papaya, its fruit harvested before ripeness, has long been part of Creole cuisine, whether raw in salads or baked in gratins. Grated and dressed with a vinaigrette generous in lime and chili, it belongs to the souskay family, those Creole preparations of raw fruits or vegetables, seasoned and served as a starter.

Green papaya has almost no flavor of its own, which is why it takes on the full flavor of its vinaigrette: it is the vinaigrette, more than the fruit, that gives the salad its character.

What are the essential ingredients of the green papaya salad

What to know about the green papaya salad

Green papaya salad is a fresh, crunchy Antillean starter made of grated green papaya, the fruit of the papaya tree picked before it ripens, with firm white flesh. Carrot, garlic, chilli and oil are added, with a dressing generous in lime juice. Since green papaya has almost no taste of its own, it takes on the full flavour of that dressing. It is sprinkled with lime juice as soon as it is grated and mixed just before serving, as a starter, with a Creole dish or with aperitifs.

Frequently asked questions about the green papaya salad

What exactly is green papaya?

Green papaya is not a specific variety: it is the fruit of the papaya tree harvested before it ripens, with firm, white flesh, without the black seeds of the ripe fruit. Once ripe, the same papaya turns orange, sweet, and is eaten as a fruit.

How do you keep grated papaya from browning?

Drizzle the papaya with lime juice as soon as it is grated: the acidity slows its oxidation on contact with air. You can also prepare the vinaigrette ahead of time, but mix everything together just before serving, to keep the fruit's crunch.
