African cuisine is not limited to recipes: it is also a set of social gestures that organise the meal and community life. Three West African customs illustrate this dimension: Senegalese téranga, the kola nut offered at life's major milestones, and the attaya tea ritual.
Téranga, a hospitality prepared before the guest arrives
In Senegal, téranga, a Wolof word, describes an art of welcome that goes beyond politeness: many families prepare an extra plate in case a visitor turns up, and the best pieces of the dish go to them. This gesture is often built around a shared dish, over which guests share a thiéboudienne or a poulet yassa, and it is passed on to children from a young age, notably through folk tales. Find the recipes for thiéboudienne and poulet yassa on the blog.
The kola nut, an offering for life's major milestones
In West Africa, offering a kola nut at a meeting or a ceremony is a sign of respect and sharing. It marks a child's birth at their christening, seals the union of two spouses, and honours the deceased at their funeral. This custom, found in many traditional cultures of the region, makes the kola nut a social object that accompanies the moments that shape the life of a family or a village.
Attaya, the three-glass tea ritual
The word attaya comes from a term used in the Maghreb for tea, brought to Mauritania by trans-Saharan trade, then introduced to Senegal by Quranic students who carried it back to the country. The ceremony unfolds over three successive rounds, brewed from the same leaves: the first bitter, the second milder, the third sweet. A popular saying sums up this order: the first glass bitter as death, the second mild as life, the third sweet as love. Poured from a height to form a froth on the surface, the tea is prepared with green tea for ataya, sugar and mint, over about thirty minutes, at the pace of the conversation.
