What is petit cola?
Petit cola is the seed of Garcinia kola, a tree of West and Central Africa. It is called bitacola (close to bitter kola, its English name), orogbo in Yoruba, aki ilu in Igbo or namijin goro in Hausa. It is not the cola nut: that comes from a different tree, the cola tree, and has neither the same shape nor the same taste. Ground, the seed gives this light brown powder with a marked, slightly peppery bitterness.
How to use it?
Sprinkle a small pinch into long-simmered sauces, meat, fish or leafy vegetable dishes: its bitterness pairs well with rich stocks. Always start with a small amount and adjust while cooking, since the flavour is powerful. Widely used in Côte d'Ivoire, Cameroon and Nigeria, this powder simplifies dosing compared with the whole grated seed and keeps a consistent flavour from one dish to the next.
