How to keep and use dried peppers

Dried chilies are a common ingredient in African cuisine, adding a touch of heat and flavor to many dishes. But how do you store and use them properly to get the most out of them? Follow these simple steps to fully enjoy dried chilies in your cooking.

Step 1: Choose the right peppers

First of all, it's important to choose the right chilies for your cooking. There are a variety of dried chilies available on the market, ranging from mild to very hot (as mentioned in our previous post). The most commonly used in Africa are the bird's eye chili, the habanero chili, and the scotch bonnet chili.

If you're not used to spicy dishes, opt for milder peppers like Espelette peppers or bird's eye chilies. If you're more of a thrill-seeker, try spicier varieties like habaneros or Scotch bonnets.

Step 2: Store Dried Chili Peppers Properly

To store your dried chilies, it's best to store them in a cool, dry place away from direct sunlight. You can also store them in an airtight jar or resealable plastic bag. Dried chilies can last for several months if stored properly.

Step 3: Use Dried Chili Peppers in Cooking

Dried chilies can be used in a variety of ways in African cuisine. You can rehydrate them by soaking them in hot water for about 15 minutes before using them in your dishes. They can also be ground into a powder to use as a seasoning or added whole to stews for a spicy kick.

Be sure to use dried chilies sparingly, as they can quickly make a dish too spicy. It's best to add them gradually according to your personal taste.

Step 4: Experiment with different recipes

Dried chilies can be used in a variety of African recipes, from sauces and soups to meat and fish dishes. Feel free to experiment with different recipes to discover how they can add a spicy and flavorful touch to your favorite dishes.

Don't be afraid to use dried chilies in your cooking! With these simple steps, you can fully enjoy their flavor!
