Ingredients
- Eggplants: 2 medium (approximately 600 g)
- Garlic: 2 cloves
- Lemon juice: 1/2 lime
- Olive oil: 10 cl (plus a drizzle for serving)
- Cumin: 1 pinch
- Salt: to taste

 

For the service
- Drizzle of olive oil
- Sumac: for sprinkling
- Espelette pepper: optional
- Fresh coriander: 2 sprigs, chopped
- Pita bread or sandwich bread: to accompany

- Blowtorch or oven
- Baking sheet
- Paring knife
- Citrus press
- Colander
- Blender or mixer
- Tablespoon

- Preparation: 10 minutes
- Cooking: 35 minutes (if using the oven)

Preparation steps

1. Preparation of the eggplants:
   - Preheat your oven to 220°C.
   - Prick the skin of the eggplants several times with a fork.
   - Arrange the eggplants on a baking sheet and bake for about 35 minutes, until the skin is charred and the flesh is tender.

2. Preparation of garlic and lemon:
   - While the eggplants are cooking, peel and remove the garlic cloves. Chop them finely.
   - Squeeze the lime to extract the juice.

3. Mixing the ingredients:
   - Once the eggplants are cooked, let them cool slightly. Cut them in half and scoop out the flesh with a spoon, avoiding the burnt skin.
   - In a blender, add the eggplant flesh, chopped garlic, lemon juice, cumin, sumac and a pinch of salt.
   - Pour about 5 cl of olive oil into the mixture.

4. Mixing:
   - Blend everything until you get a smooth, creamy purée. While blending, gradually add the remaining olive oil in a thin stream, as you would with mayonnaise.

5. Flavor adjustment:
   - Taste and adjust the seasoning by adding more salt or lemon if necessary.

6. Service:
   - Transfer the baba ganoush into a bowl, make grooves on the surface with the back of a spoon.
   - Drizzle with olive oil and sprinkle with sumac and possibly Espelette pepper.
   - Serve with pita bread or sandwich bread.
