Cod Blaff Recipe for 4 people.

 

Ingredients

  • 1 kg of cod back or steaks (or other firm-fleshed white fish)

  • 4 limes

  • 3 chives (country onions)

  • 2 spring onions

  • 3 cloves of garlic

  • 1 teaspoon of thyme

  • 2 leaves of Indian wood (or 1 teaspoon of Indian wood powder)

  • 1 clove

  • 150 ml of white wine

  • 100 ml of water

  • 3 tablespoons of sunflower oil

  • 3 bird's eye chilies

  • A few sprigs of parsley

  • Salt, to taste

 

Necessary utensils

  • Salad bowl

  • Dutch oven or large saucepan

  • Cling film

  • Knife

  • Cutting board

  • Wooden spoon

 

Preparation time

  • Preparation time: 25 minutes

  • Resting time: 2 hours (marinade)

  • Cooking time: 25 minutes

 

Preparation steps

  1. Preparation of ingredients:

    • Thinly slice the chives and onions with their stems.

    • Squeeze the lemons to extract the juice.

    • Cut the peppers into thin slices.

    • Chop half of the parsley.

  2. Marinade :

    • In a salad bowl, mix the chives, onions, lemon juice, garlic, thyme, chili peppers, and parsley.

    • Add the cod to this mixture and coat well.

    • Cover with cling film and let marinate in the refrigerator for 2 hours.

  3. Cooking :

    • In a large pot, pour the marinade, then add the white wine, water, oil, allspice leaves, cloves and a pinch of salt.

    • Dip the fish into this preparation.

    • Bring to a boil over high heat for 3 minutes.

    • Reduce heat and simmer for 15 minutes.

  4. Finishing :

    • Simmer for another 10 minutes uncovered over low heat.

    • Sprinkle with the remaining parsley before serving.
