Plantain banana donuts

Here is the complete recipe for plantain fritters (Caribbean) for 4 people.

Ingredients

  • 4 very ripe plantain bananas

  • 200g of flour

  • 2 tablespoons of sugar

  • 1 teaspoon of baking powder

  • 1 teaspoon of liquid vanilla

  • 1 egg

  • 5 tablespoons of rum

  • 35 cl of frying oil

Utensils

  • 1 salad bowl

  • 1 fork or potato masher

  • 1 whisk

  • 2 tablespoons

  • 1 deep fryer or deep frying pan

  • 1 skimmer

  • Absorbent paper

Preparation time

  • Preparation: 15 minutes

  • Cooking time: 5 minutes

  • Total time: 20 minutes

Preparation steps

  1. Peel the plantains and mash them in a bowl using a fork or potato masher until smooth.

  2. Add the flour, sugar, baking powder, liquid vanilla, egg and rum to the banana puree.

  3. Mix all the ingredients well with a whisk until you get a smooth paste, similar to cake batter.

  4. Heat the frying oil in a deep fryer or deep frying pan to 180°C.

  5. Using two tablespoons, form balls of dough the size of a large walnut.

  6. Gently lower the dough balls into the hot oil and fry for about 2-3 minutes, until golden brown.

  7. Remove the donuts with a slotted spoon and place them on paper towels to remove excess oil.

  8. Repeat until all the dough is used up.

Preparation tips

  • Use fully ripe plantains for a sweeter taste and a softer texture.

  • If the batter is too runny, add a little flour. If it is too thick, add a little milk.

  • For a more exotic flavor, you can add a pinch of cinnamon or nutmeg to the dough.

  • Be careful not to overfill the fryer to prevent the oil temperature from dropping too quickly.

  • Serve the doughnuts while still warm, sprinkled with icing sugar or with chocolate sauce for an extra treat.

  • These donuts will keep well for 1-2 days in an airtight container at room temperature. Warm them slightly before enjoying.
