Method

  1. Dissolve the yeast in 2 tablespoons of lukewarm water with a pinch of the weighed sugar and leave to foam for about 10 minutes.
  2. In a large bowl, mix the flour, the rest of the sugar, the salt, the cardamom, the ginger and the cinnamon.
  3. In another bowl, beat the egg with the coconut milk.
  4. Make a well in the dry ingredients, pour in the liquid mixture and the activated yeast, then mix until you get a soft dough.
  5. Knead the dough on a floured surface for 5 to 7 minutes, until smooth and elastic.
  6. Cover with a cloth and leave to rise in a warm place for 1 h 30 to 2 hours, until the dough has doubled in size.
  7. Knock back the dough, divide it into balls, then roll it out to about 1 cm thick and cut into triangles or rounds.
  8. Leave the cut pieces to rest for 10 to 15 minutes on the floured work surface, covered with a cloth.
  9. Heat the oil to 180 degrees in a large saucepan or a deep fryer.
  10. Fry the mandazi in small batches, 2 to 3 minutes on each side, until golden.
  11. Drain on kitchen paper and serve warm, with a spiced tea.

Tips

To check that the oil is ready, dip in a small piece of dough: if it rises straight to the surface forming bubbles, frying can begin.
